Abstract:

PURPOSE: To obtain a center material for a bakery dough, capable of assuming a mellow aroma of a chocolate, excellent in texture and taste and suitable for a bakery product, etc., by forming a chocolate dough containing a filler in the shape of small lumps.

CONSTITUTION: This bakery product is obtained by forming a chocolate dough containing one or more fillers, selected from among nuts, puffs, cookies, Japanese cracker chips, dried fruits, candies and IMO-KENPI (a confectionery of a chopped and fried sweet potato, dipped in a thick syrup, scooped up and cooled) having 2-25mm major axis in the form of small lumps and dispersed therein into, e.g. the shape of a rod or boiled fish paste.
