Abstract:
PROBLEM TO BE SOLVED: To obtain the subject cereal flour that shows excellent binding properties between the ingredient and the coating, when the flour is combined with water and cooked as batter, and retains crispy and soft texture, when it is used for frying by adding food oil to cereal flour and aging them with heat. SOLUTION: Food oil is added to cereal flour and aged with heat to prepare the objective cereal flour. In a preferred embodiment, the amount of the food oil to be added is 0.005-10 wt.% of based on the flour to be treated. The thermal aging is continued at 40-90 deg.C for 1-14 days. In addition, the particle size of the cereal flour is preferably 95% passable through the 60 mesh JIS sieve.
