Abstract:

PURPOSE: To provide a cereal composition and noodle having a protein content decreased to about 1/2 of the conventional noodle or below, usable as a daily food without giving disagreeable taste and palatability and having workability suitable for mechanical noodle-making.

CONSTITUTION: A cereal flour composition for low-protein noodle having a protein content of 2-5% based on dried material and a low-protein noodle made of the composition. It can be produced by compounding cereal flour with starch and optionally with gelatinized starch and/or thickened polysaccharide. The starch may be raw starch or processed starch. The composition preferably has a stress of ≥2.5kg.cm measured by a mixograph after 8min.
