Abstract:
PROBLEM TO BE SOLVED: To provide an ingredient composition for Chazuke (cooked rice with tea poured on it), containing fish and shellfish, having excellent preservability and giving a Chazuke containing fish and shellfish and having excellent taste, flavor and palatability simply by pouring hot water on it and to provide a process for the preparation of the composition.
SOLUTION: This process for the production of Chazuke ingredient composition containing fish and shellfish comprises the surface-treatment of raw fish or shellfish with a gelatin solution containing a seasoning liquid and the cooling and gelatinization of the gelatin solution. This Chazuke ingredient composition containing fish and shellfish is composed of raw fish or shellfish and a seasoning-containing gelatin gel for coating the fish or shellfish.
