Abstract:
To provide a production method of a cheese like food product capable of improving productivity of a cheese like food product and producing a cheese like food product having a proper texture.SOLUTION: A production method of a cheese like food product in one aspect comprises: a step for preparing a mixture including, moisture, grease, and starch including at least acid treated starch; a step for heating and agitating the prepared mixture for emulsifying the mixture; and a step for cooling and solidifying the emulsified mixture. A mass ratio of the starch included in the mixture to moisture is 0.55 or more and 0.92 or less, and a mass ratio of the grease included in the mixture to the starch is 0.25 or more and 1.80 or less.SELECTED DRAWING: None
