PURPOSE: To obtain a cheese-like food having good taste without using natural cheese as a raw material by adding a melting salt to powder milk obtained by drying a concentrated milk concentrated and controlled to weakly acidic area, heating, melting and cooling the mixture while adding water.
CONSTITUTION: Milks such as cow milk or processed milk consisting essentially of cow milk are sterilized and cooled according to ordinary method and then concentrated in concentration magnification of about 2-6 times, preferably using an ultrafilter membrane. Then the concentrated milk is dried by hot air and cooled and organic acid such as lactic acid or citric acid is added thereto to control pH to 5.0-5.8 and the concentrated milk is cooled. Then water is added to the concentrated milk after pH control so as to attain desired water content of final product and sufficiently mixed with the milk. Then melting salt of sodium polyphosphoric acid, etc., is added to the mixture and the mixture is treated according to ordinary method to provide cheese-like food.
