Abstract:
PROBLEM TO BE SOLVED: To provide a cheese-like food including nutrient components of soybean, which can be supplied to consumers not only as a general food but also as a food in consideration of allergy to specific raw materials, and can be manufactured without a fermentation process, with the appearance, the flavor, and the taste being similar to those of cheese.SOLUTION: The cheese-like food includes: 15 to 35 mass%, preferably 20 to 30 mass%, of soybean powder; 0.3 to 1.5 mass%, preferably 0.5 to 1 mass%, of pectin; 0 to 1.5 mass%, preferably 0 to 1 mass% of agar; an organic acid; a fragrant material; and water. The cheese-like food includes: none of the allergen materials derived from egg, milk, wheat, buckwheat, peanut, shrimp, or crab; 15 to 35 mass%, preferably 20 to 30 mass%, of soybean powder; 0.3 to 1.5 mass%, preferably 0.5 to 1 mass%, of pectin; 0 to 1.5 mass%, preferably 0 to 1 mass% of agar; an organic acid; a fragrant material; and water.
