Abstract:

PURPOSE: To remove offensive smell of garlics and obtain a novel snack food having a high nutritive value of nutritive value of garlics combined with calcium and vitamin A of cheese, by covering the surface of the garlics with cheese.

CONSTITUTION: Garlics are skinned, dipped in a saline solution, drained, heat- treated, deodorized and prepared with a seasoning solution for use. Cheese is finely cut, melted while heating in a hot water bath and a small amount of gum dispersed in water and an alcohol is added and blended with the cheese for use. The garlics are skewered, dipped in the cheese warmed at about 65°C, cooled and solidified. Thereby the aimed tasty cheese snack food having a high nutritive value without noticing bad smell peculiar to the garlics is obtained.
