Abstract:
PURPOSE: To obtain the subject cheeses without dissolving out even by heating and deforming by thermally melting cheeses, filling and packaging the molten cheeses, cooling and solidifying the packaged cheeses and applying a specific isostatic pressure thereto.
CONSTITUTION: The objective cheeses are obtained by thermally melting cheeses, filling and packaging the molten cheeses, cooling and solidifying the packaged cheeses according to a conventional method and then applying an isostatic pressure of 1-1500MPa, preferably 200-1000MPa thereto.
