Abstract:

PROBLEM TO BE SOLVED: To obtain the subject protein composition having ability to raise plasma HDL-cholesterol level and depress arteriosclerotic index by adding water to powder of Chinese millet, millet or foxtail millet followed by gelatinization and then subjecting the resultant paste to α-amylase treatment and separating the precipitate produced.
SOLUTION: Chinese millet, millet or foxtail millet is made into powder, to which water is added, and the mixture is gelatinized at 90°C for 30min. The resultant paste is adjusted to pH7, α-amylase is then added to the paste to carry out a reaction at 90°C for 3h to decompose the starch followed by centrifugal separation and collecting the resultant precipitate, which is then air-dried, thus obtaining the objective protein composition of millet origin. This composition, which has ability to raise plasma HDL-cholesterol level and depress arteriosclerotic index, is useful for foods or pharmacologically active substances effective for preventing and treating hypercholesterolemia and arteriosclerosis etc.
