PURPOSE: To produce a novel chitobiase utilizable for the formation of protoplast as a cell wall lytic enzyme, by culturing a novel bacterial strain belonging to Aeromonas genus.
CONSTITUTION: A bacterial strain belonging to Aeromonas genus and capable of producing novel chitobiase, e.g. Aeromonas hydrophila subsp. anaerogenes A52 (FERM-P NO.7206), is cultured at 25W30°C for 2W3 days under aerobic condition, and the novel chitobiase is separated mainly from the filtrate of the medium. The chitobiase exhibits the following physical and chemical properties. (1) Decomposition of chitin when used in combination with chitinase, (2) residual activity ratio of ≥90% at 6.0W9.0 after the treatment at 37°C for 30min, (3) molecular weight, 115,000, etc.
