Abstract:

PURPOSE: To obtain chopped Welsh onion preservable in the freshness, flavor and nutrients of raw welsh onion for a relatively long period by cutting Welsh onion grown to a specified extent in narrow round slices and by dehydrating the water content corresponding to the surface-adhered water after hydro-extraction.

CONSTITUTION: Firstly, Welsh onion grown to such an extent as to be ca.10mm in stem diameter is cleaned through washing followed by hydro-extraction. Thence, the resulting Welsh onion are cut in narrow slices followed by dehydration of the water content corresponding to the surface-adhered water after the hydro-extraction, thus obtaining the objective chopped Welsh onion. The above-mentioned original Welsh onion is slimy compared to conventional ones ≥15mm in average stem diameter raised for cooking use, but its extent is small. For the present chopped Welsh onion, such a packaging container is used that the main body 1 is pref. a press form of polyethylene sheet, and within this body, plural recessed holding parts 2 of appropriate size are provided and a recessed groove 3ca. 1-2mm wide and 1mm deep is communicatedly provided from one point of each holding part 2 to the nearest edge. Use of this container will eliminate the exposure of the whole chopped Welsh onion at a time to air abundant in various bacteria, leading to protecting the onion from putrefaction and freshness deterioration.
