To produce a new chromanol derivative comprising the chromanol derivative obtained by allowing a phospholipase C to act on a phosphatidylchromanol derivative, capable of inhibiting the formation of a lipid peroxide, and used as an antioxidant, etc., for a food, a cosmetic and a drug.
This chromanol derivative is the new one of formula I [(n) is an integer of 1-5; X is a monovalent cation], e.g. 2-(2',5',7',8'-tetramethyl1-6'- hydroxychroman) ethyl; phosphate, having activities inhibiting the formation of a lipid peroxide. The chromanol derivative is useful; as an antioxidant, etc., used for a food, a cosmetic, a drug, etc., because having excellent antioxidative activities. The compound is obtained by allowing phospholipase C to act on a phosphatidylchromanyol derivative of formula II (R1 and R2 are each H or a 2-24C saturated or unsaturated fatty acid residue).
