Abstract:
To provide a classification method of mastication difficulty of food and food for mastication functional evaluation with clear criterion and objectivity.SOLUTION: A classification method of mastication difficulty of food for classifying mastication difficulty of food when it is taken by humans includes: a measurement process for measuring hardness, adhesive force and adhesive property of food; a calculation process for calculating mastication properties from the measurement results of hardness, adhesive force, and adhesive property; and a cluster analysis process for analyzing clusters on the basis of the hardness and the mastication. A mastication functional evaluation food has same hardness and mastication property as a food belonging to same class classified by food mastication difficulty classification method on a food listed in a full denture mastication performance table.SELECTED DRAWING: Figure 3
