Abstract:
To provide a cleaning method in meat processing facilities in which cleaning comprising sterilization can be carried out efficiently to meat processed in each step without using chemicals for sterilization and chemicals for washing, in addition, the cleaning comprising washing or disinfection to equipment and floor used in each step can be efficiently carried out.SOLUTION: In meat processing facilities where meat processing is carried out through multiple steps, acidic electrolyzed water and alkaline electrolyzed water generated by an electrolytic water generation device 13 can be supplied to each step by pipes 14, 15 and branch pipes 16, 17, the acidic electrolyzed water is sprayed or applied to the meat processed in one step or the meat processed in multiple steps, the acidic electrolyzed water is supplied into a dipping bath and the cleaning comprising the sterilization is carried out to the processed meat, and the alkaline electrolyzed water or the acidic electrolyzed water is supplied to the equipment or floor used in one step or multiple steps to thereby carry out the cleaning comprising the washing or disinfection.SELECTED DRAWING: Figure 1
