Abstract:

PURPOSE: To obtain a coating composition containing an oxidized starch and a waxy starch, free from tackiness, good in solubility in mouths, excellent in texture, and useful for fried foods such as tenpura(a Japanese deep-fat fried cooking).
CONSTITUTION: This coating composition for fried fopds contains (A) an oxidized starch such as an oxidized starch produced by oxidizing a starch such as corn starch with an oxidizing agent such as sodium hypochlorite, and (B) a waxy starch such as waxy corn starch in an A/B weight ratio of 7/3 to 3/7. The total content (converted into the contents of the dry components) of the components A and B is preferably 2-20wt.% based on the weight (converted into the dry product) of the coating composition for the fried foods.
