Abstract:
To provide a method for producing a coffee composition lowered in phenols while sustaining chlorogenic acid in coffee and having excellent safety and blood pressure lowering action, to provide the composition and to provide a coffee drink.
This method for producing coffee which contains 0.01-20 mass% of chlorogenic acid and has a ratio of phenols/Brix of (5:1,000,000) or above and less than (100:1,000,0000) comprises subjecting a coffee extract to active carbon treatment and bringing the product into contact with a synthetic adsorbent.
