Abstract:
To provide particles colored by an anthocyanin pigment, which have a wide color range and a clear color and also to provide a method for producing the particles.
Particles having a wide color range, clear color development and fluorescence properties and the like can be obtained by causing color development on a solution containing the anthocyanin pigment under various conditions of pH, addition of a metal and heating. Further, a green color can be obtained by using chitosan particles without adding an alkalizing agent, by which there can be obtained green particles having high safety to a living body.
