Abstract:

PURPOSE: To color a candy, e.g. candy, caramel, nougat, etc., to color tone of yellowish brown W brown having density feeling as well as improved heat, light resistance, etc., without coloring and changing by pH, by using an onion pigment for coloring the candy.

CONSTITUTION: A candy, e.g. candy, caramel, nougat, etc., is colored to yellowish brown or brown using an onion pigment extracted from the yellowish brown periderm of an onion. Specific examples of the coloring method include a method for heating a blend of sugar with thick malt syrup and water, adding the onion pigment, filling the resultant blend in a mold, cooling the mold, etc. The obtained candy will hardly fade even by preserving under condition of heating or irradiation of sunlight.
