Abstract:
PROBLEM TO BE SOLVED: To provide a laminated dough capable of obtaining stably by a simple method, a layering bakery product whose surface has a homogeneous, smooth and excellent appearance, capable of preventing breakage during circulation/storage or secondary processing; and to provide a layering bakery product having the characteristics.SOLUTION: There are provided a complex laminated dough using a following dough (A) as a topping dough and a dough (B) as an inner dough, and a layering bakery product obtained by molding and then heating the complex laminated dough: (A) a non-laminated dough containing yeast and (B) a laminated dough.SELECTED DRAWING: None
