Abstract:
To provide a composite bakery product formed by baking a composite bakery dough comprising short paste as topping dough, and bread dough as inside dough, the composite bakery product capable of suppressing chronological moisture shift from inside dough, holding soft texture of inside dough, and preventing peeling of the topping dough in storage, and a production method thereof.SOLUTION: There is provided a composite bakery dough comprising short paste as topping dough, and bread dough as inside dough, in which, small piece-like caramel is arranged between the topping dough and the inside dough.
