Abstract:

PROBLEM TO BE SOLVED: To obtain the subject food having excellent taste, texture and flavor which conventional fried foods have not had by enclosing meat and specific solid sauce with coat and frying the food by oil.
SOLUTION: This fried food is obtained by wrapping meat and solid sauce containing ingredient or not containing ingredient with coat and frying the wrapped food with oil. Sauce which is solid at normal temperature and becomes paste by heating is preferably used as the solid sauce not containing ingredient. Sauce arranging solid sauce not containing ingredient material around the ingredient material is preferably used as the solid sauce containing the ingredient. Oil-in-water type emulsion containing 5-40 wt.% oil and fat, 0.2-10% one or more kinds of materials selected from gelatin, agar, glucomannan and gellan gum and 2-10% yolk is preferable as solid sauce not containing ingredient material. Beef, pork, chicken, fish meat (including aquatic animal such as squid or oyster) or the like is preferably used as the meat.
