Abstract:

To provide a composition comprising milk protein and a fatty acid material effective for stabilization of a fatty acid, in particular, effective for physical stabilization and flavor masking and a process of their preparation.

The composition comprises, (a) milk protein, wherein the milk protein is at least partially derived from milk protein concentrate, and (b) a fatty acid material selected from the group consisting of fatty acids, non-glyceryl esters thereof, and mixtures thereof. The composition is particularly useful as food or beverage compositions.
