Abstract:
PURPOSE: To obtain the subject composition comprising a microbe-lysing enzyme product originated from Streptomyces and a specific glucanase and useful as a preservative, etc., for preserving products liable to be degraded with microorganisms.
CONSTITUTION: This composition comprises a microbe-lysing enzyme product obtained by the culture of Streptomyces DSM-4666 and β-1,3-glucanase in a weight ratio of 1:100 to 100:1, preferably 50:1 to 1:50. The composition is preferably added to a product to be preserved at such a dose that the enzyme product and the glucanase are contained in amounts of 0.1-200 u and 0.1-100 u, respectively, per g of the product.
