Abstract:
To provide: a composition for preventing a foodstuff such as a vegetable, fish meat, and livestock meat from losing its shape due to a preparation step in view of the problem that its shape is more likely to lose by subjecting the foodstuff to the preparation step, specifically, a step of a physical or chemical treatment such as a heating step, a pressurization step, and an enzyme treatment step; and a prepared food having the foodstuff having a retained shape.SOLUTION: Sprinkling, etc. of a product obtained by pregelatinizing hydroxypropylated or acetylated processed starch onto a surface of a foodstuff after the foodstuff undergoes primary preparation including at least a heating step is carried out to coat the foodstuff surface to thereby prevent the foodstuff from losing its shape caused by a following preparation step (a re-preparation step such as seasoning and microwaving (also referred to as secondary preparation)).SELECTED DRAWING: None
