Abstract:
PURPOSE: To obtain a processed fish product which satisfies requirements for a fish paste from such kinds of fish that are conventionally regarded as unsuitable for the production of a fish paste, by treating protease in a fish material with α-2-macroglobulin. CONSTITUTION: The processed fish product of the purpose is obtd. by treating a fish material by an enough amt. and method to neutralize or inhibit protease (A) included in the fish material, and preferably by treating protease (A) with α-2-macroglobulin (B) obtd. from a mammals. As for mammals, cow, pig or horse is preferable.
