Abstract:
To provide high-purity rebaudioside J, methods of preparing high-purity rebaudioside J, and methods of modifying functional attributes of a sweetener in a food product.SOLUTION: A method of forming rebaudioside J comprises reacting a protected rebaudioside in the presence of a phase transfer catalyst so as to prepare an intermediate compound, and subjecting the intermediate compound to deprotection conditions. A method of modifying functional attributes of a sweetener in a food product comprises adding rebaudioside J to the food product in an amount sufficient to realize a modification concentration of rebaudioside J in the food product, where rebaudioside J is present in a concentration lower than the taste recognition threshold concentration thereof.SELECTED DRAWING: Figure 2
