To prepare bread, which can restore its volume through thawing heat treatment by a microwave oven or the like, by sandwiching edible filling previously frozen to lower than a fixed temperature between two pieces of bread dough compressed after baking, and thawing it later.
The hand-shaped bread is provided by the method of filled bread baking by using e.g. strong flour, sugar, shortening, salt, yeast and skim powder milk, etc. Next, this bread is sliced into two pieces and two slices of bread having thickness of 25mm is provided. Next, as the edible filling, disk-shaped Hamburg steak having thickness of 8mm, diameter of 80mm and weight of 50g is frozen to lower than -30°C in a freezer, sandwiched between two slices of bread and immediately compressed. Next, it is put into a quick freezer of lower than -30°C and left for 30 minutes to be frozen so that the objective bread can be prepared.
