To provide a method for producing a concentrated milk product enabling a concentrated milk product to be stored for a long period of time without adding any food additives, and free from such problems as to cause scorching on a heating treatment machine during produced and/or generate insoluble substance or coagulated substance in the concentrated milk product.
The method for producing a concentrated milk product comprises the following process: a preheat treatment process where milk to be used as raw material for a concentrated milk product is subjected to none of homogenization treatment or subjected to low-pressure homogenization treatment, and subjected to ultra high-temperature short-time heating treatment or heat sterilization treatment having the same heating effect as that of the ultra high-temperature short-time heating treatment; a concentration process where the milk obtained after the preheating treatment process is concentrated; a heat sterilization treatment process where the concentrated milk obtained after the concentration process is subjected to ultra high-temperature short-time heating treatment or the heating sterilization treatment having the same effect as that by the ultra high-temperature short-time heating treatment; and a homogenization treatment process where the concentrated milk obtained after the heat sterilization treatment process is aseptically subjected to the homogenization treatment.
