Abstract:

PURPOSE: To concentrate and recover aromatic component(s) in high efficiency in an easily handleable manner by freezing treatment using an ice nucleus activity-bearing specific crushed product encapsulated in a semi-permeable polymer membrane.
CONSTITUTION: In concentrating aromatic component(s) (e.g. yogurt) existing in water, a freezing treatment is made using a crushed product of the microbial cells of ice nucleus activity-bearing microorganisms (e.g. bacteria belonging to Pseudomonas) or ice nucleus-active substance-contg. bacteria to concentrate and recover the aromatic component(s).
