Abstract:
PROBLEM TO BE SOLVED: To provide a high shear conching method excellent in washability and easily corresponding to small lot multiproduct production by solving washability of a conventional conching apparatus in manufacturing oily confectionery dough, and a conching apparatus.SOLUTION: Oily confectionery dough is subjected to conching by using a planetary mixer which has stirring blades as frame type flat plate twisted blades, and achieves the planetary movement of the three stirring blades of a diameter D communicated with a drive shaft by making the rotation direction of revolution and autorotation reverse with each other in a stirring vessel (tank) so as to stir and knead a treatment material.SELECTED DRAWING: Figure 1
