Abstract:
To provide a confectionery production arrangement capable of producing confectionery compatible with consumption trend and of preventing its operating efficiency drop.
This confectionery production arrangement has a compressor 15 for chilling or heating confectionery feedstocks by circulating a refrigerant, and a control unit 5 (heat sterilization operation control means) for performing a heat sterilization by heating confectionery feedstocks through controlling the compressor 15, wherein the control unit 5 (also as a chilling or heating operation control means) is also intended for producing cold or hot confectionery respectively by chilling or heating confectionery feedstocks through controlling the compressor 15.
