PURPOSE: To obtain a syrup containing branched oligosaccharide, by preparing an aqueous solution of glucose having a solid component concentration and a glucose concentration higher than specific respective range and passing the solution through a reactor filled with an immobilized enzyme having sugar- condensing action, at a temperature above a specific level.
CONSTITUTION: An aqueous solution of glucose having a solid component concentration of ≥60%, preferably ≥70% and containing ≥70%, preferably ≥80% glucose (based on solid component), e.g. dissolved glucose crystal, refined glucose syrup, etc., is passed through a reactor containing an immobilized enzyme consisting of glucoamylase originated from microorganism belonging to Aspergillus genus or Rhizopus genus to obtain a syrup containing ≥40% branched oligosaccharide (based on solid component). The temperature of the syrup passing through the reactor is ≥60°C, preferably 65W75°C.
