PURPOSE: To produce an edible vinegar having excellent taste and flavor continuously in high yield, by filling a fibrous carrier in a fermentation column having a structure to enable the passage of a liquid, applying acetobacter to the carrier and supplying raw material of edible vinegar to the fibrous carrier and, at the same time, passing an oxygen-containing gas through the column.
CONSTITUTION: A fibrous carrier 13 supporting acetobacter is filled in a fermentation column 11. A raw-material-introducing pipe 14 and a gas-circulation pipe 20 are connected to the column, and an oxygen-supplier 23 is connected to the gas-phase part 18 of a gas-liquid separation tank 16 via a gas-feeding pipe 21. The oxygen concentration in the gas phase is controlled by the oxygen concentration controller 24 and a part of the fermentation raw material is taken out of the column. The residual alcohol concentration is determined by the alcohol concentration detector A, the flow rate of the feeding pump 7 supplying the raw vinegar in the raw vinegar tank 9 to the introducing pipe 14 is controlled by the alcohol concentration controller B, and the alcohol concentration in the fermentation raw material is adjusted to 0.1W2.0% after contacting with the fibrous carrier.
