To continuously produce a food having uniformized quality and high protein content in high efficiency by continuously discharging and dispersing a protein solution into a hot water tank supplied with a hot water of a constant temperature at a constant rate, thereby curding the protein solution.
A protein solution (b) cooled to ≤10°C and adjusted to pH 4.8-5.8 is continuously discharged above the water surface of a hot water tank 2 supplied with hot water (a) maintained at a constant temperature, e.g. 45-95°C and the discharged solution is dispersed in the hot water (a) to form a curd of the solution and continuously obtain the objective food having high protein content. The high-protein food is produced preferably by using an apparatus having a protein solution discharging and dispersing nozzle 1 placed close to the water surface of the hot-water tank 2.
