PURPOSE: To excellently roast food dough to be transferred together with a baking plate by placing foods on the baking plate moving between an upper and a lower heating sources and arranging carbonaceous plate materials having specific relative radiation ratio under at least a part of the upper heating sources.
CONSTITUTION: A moving baking plate 2 is placed in the interior of a furnace 1 and food dough 5 is passed through upper and lower heating sources 3 and 4 of electricity or gas. Carbonaceous plate materials 6 (having ≥60% relative radiation ratio when a completely black material has 100% relative radiation) are arranged right under at least a part of the upper heating sources 3 and the food dough is roasted under heating in a wide wavelength range of, e. g., 1-25μ to give foods having excellent taste and a feeling of large volume.
