PURPOSE: To prepare instant gelatinized noodles having improved restoring properties to the original state and good taste, by dividing uniform wide sheet-shaped noodle belt in the running direction, steaming the noodle belt while being sent in a state to be apart each other, predrying it, cutting and drying to a water content ≤10wt%.
CONSTITUTION: A raw material comprising wheat flour as a main ingredient is processed by the blender 1 to give a raw ingredient with a water content of 30W 40wt%, which is made into the uniform sheet-shaped belt 3 having a thickness of 0.5W1.5mm and a width of 40W100cm, by the molding machine 2. The belt is cut and divided in the advance direction by the dividing machine 6 while being sent by the transportation roll 5 to give the noodle belt 7 having a width of 10W20cm, which is treated by the steaming device 17 while being apart by the separating roll 14. The noodle belt is preheated into a water content of 15W35wt%, cut into noodle lines, and dried secondarily to give a product having a water content of ≤10wt%.
