Abstract:

PROBLEM TO BE SOLVED: To convert lutein or its natural ester into zeaxanthin capable of giving a strong gold color in a high yield by subjecting the lutein or its natural ester to a basic catalyst isomerization reaction under specific reaction conditions.
SOLUTION: (A) A natural lutein-containing material or pure lutein, if necessary, preliminarily treated is thermally converted into zeaxanthin at a temperature of approximately 50°C or higher (preferably a temperature of ≤120°C) in the mixture of (B) either of dimethyl sulfoxide or an organic solvent based on a saturated aliphatic and/or aromatic hydrocarbon with (C) an alkali metal hydroxide aqueous solution. When the organic solvent based on the hydrocarbon is used in the method, the reaction is carried out in the presence of a phase transfer catalyst.
