Abstract:

To provide a method for cooking half-boiled pasta and noodles, which are reduced by boiling pasta such as spaghetti and macaronis and noodles such as Japanese noodles in a short time and packaging them, then placed on distributive machinery as chilled or frozen products to be easily cooked by microwave ovens in convenience stores or at homes.

In this method for cooking pasta or noodle, cooking when half- boiled pasta and noodles are cooked by heating, water or an aqueous solution of electrolyte are made to present together. The water or aqueous solution is poured into a heating bowl immediately before the half-boiled pasta or noodles is subjected to microwave heating, or a solid material produced by freezing water or the aqueous solution or solidifying it with the aid of an eatable solidifying agent is laid together with the encased half-boiled pasta or noodles. This method allows to produce pasta or noodles having an excellent palate feeling similar to that of directly cooked pasta or noodles from dry pasta and noodles by cooking the half-boiled pasta and noodles by heating in the presence of water or the aqueous solution by use of microwave oven so as to make them absorb water.
