Abstract:

PURPOSE: To obtain rice having improved taste and nutritive value, by adding powder of a nut or seed to rice or cooked rice.

CONSTITUTION: Powder of a nut and/or seed is added to rice or cooked rice. The nut or seed or both are preferably powder of grains which is completely powdered by including a lipid in cyclodextrin. The cyclodextrin is a cyclic oligosaccharide having glucose linked through α-1,4-bond. The amount of the nut or seed to be used is, e.g. 0.01W0.05pts.wt. powder containing 30wt% cyclodextrin to 1pts.wt. relatively new rice having good texture without smell of old rice for imparting the flavor of the nut or seed thereto. When the rice is cooked to give Chinese dish of fried rice, hotchpotch, etc., the amount must be half of the above-mentioned amount considering moisture content of the rice.
