PURPOSE: To perform quick cooling of noodle strings in high efficiency while eliminating the problem of environmental pollution caused by a large amount of waste cooling water by putting one meal of just-boiled noodle strings in a vessel and applying cooling air flow from the bottom of the vessel.

CONSTITUTION: One meal of just-boiled noodle strings A4 is put into a vessel 6, passed along a transfer path 7a and blasted with cooling air at the bottom of said vessel through a blasting port 22 of a blow-cooling apparatus 20 to effect quick cooling of the noodle strings A4. Preferably, the above vessel 6 is perforated at least at the bottom face and the cooling air is blasted into the vessel through a number of perforations formed on the bottom of the vessel.
