Abstract:

To provide a cooling method and a cooling device, and a freezing method and a freezing device not excessively drying a processed object (for example, food), not needing heating for defrosting processing, capable of continuing cooling processing even in the defrosting processing, not enlarging fine ice crystals, and further processing foods of high temperature generating a large mount of steam by directly charging the same to a processing chamber.

In this cooling method for cooling the cooled object by distributing a gas X cooled in a cooling chamber 3 to the processing chamber 1 receiving the cooled object 12, by an air distributing means 4, the cooling gas distributed from the cooling chamber to the processing chamber is divided into a cooling gas Y for processing guided to the processing chamber, and a cooling gas Z for circulation guided to a bypass passage Q returning to the cooling chamber without passing through the processing chamber, by an air volume adjusting means 2 disposed between a gas introducing portion of the processing chamber and the gas distributing means. The cooling device has the processing chamber 1 capable of receiving the cooled object, the cooling chamber 3 for cooling the gas, the air distributing means 4, and the air volume adjusting means 2 for dividing the gas into the cooling gas for processing guided to the processing chamber and the cooling gas for circulation returning to the cooling chamber without passing through the processing chamber.
