Abstract:

PURPOSE: To cool stock water for the brewing of SAKE (Japanese rice wine) in high efficiency by operating a refrigerator constantly at full power rate.
CONSTITUTION: A SAKE-brewing stock water at the upper part in a tank 1 is supplied to a refrigerator 4, the cooled water is returned to the lower part of the tank and the water in the tank is completely cooled from 20°C to the prescribed temperature, i.e., 2°C. When the temperature difference becomes <5°C at the last cooling cycle in the full power operation of the refrigerator 4, the low-temperature water at the lower part in the tank is mixed to the feeding water at the water from the time when the water temperature becomes 10°C in the cooling cycle immediately before the development of the temperature difference of 5°C. The refrigerator 4 is supplied with water controlled to a temperature (7°C) higher than the prescribed temperature (2°C) by the full power capacity of the refrigerator (5°C) and the water is cooled from 7°C to the prescribed temperature 2°C by the full power operation of the refrigerator.
