Abstract:

To provide cottage cheese, of which tissue does not get hard by heating sterilization and in which the reduction of pH during preservation is little, and a production method therefor.

Concerning the production of cottage cheese with satisfactory preservability, Lactobacillaceae is used as a starting material for producing polysaccharides and this is sterilized by heating. As the Lactobacillaceae for producing polysaccharides, Lactococcus lactis subsp. Cremoris SBT 0495 or Lactobacillus helveticus SBT 2171 is used.
