Abstract:

PURPOSE: To obtain the subject cream having excellent whip characteristics by blending a mixed emulsifier comprising a mixture of transferred lecithin as a first emulsifier, glycerin fatty acid ester as a second emulsifier and polyglycerin fatty acid ester as a third emulsifier, etc.

CONSTITUTION: The aimed cream is blended of a mixed emulsifier composed of preferably ≤40wt.% transferred lecithin (preferably phosphatidyl glycerol or lysophosphatidyl glycerol) as a first emulsifier, preferably 10-80wt.% glycerin fatty acid ester as a second emulsifier and preferably 10-80wt.% at least a species of polyglycerin fatty acid ester, cane sugar fatty acid ester and sorbitan fatty acid ester as a third emulsifier.
