Abstract:
To provide a creaming powder that does not contain milk protein but has a satisfactory rich feeling, and also has a good flavor even when using vegetable protein.SOLUTION: In one embodiment, creaming powder contains lecithin, sorbitan fatty acid ester with an HLB of less than 10, mono glycerol fatty acid ester with an HLB of less than 10, and vegetable oil and fat but does not contain milk protein. In another embodiment, the creaming powder may further contain vegetable protein. A composition for instant beverage contains the creaming powder of either embodiment described above. A method for producing food and drink uses the creaming powder of either embodiment described above, as the raw material.SELECTED DRAWING: None
