Abstract:
PROBLEM TO BE SOLVED: To obtain a dough suitable for preparing a roll of bread, capable of re-heating with microwave, having short bite and soft in the core by compounding wheat flour, yeast, salt, fat, a bread modifier, sugar, a specific monoglyceride composition and water at specific ratios. SOLUTION: This dough can be re-heated in a receptor by generated microwave. The dough is prepared by compounding 100wt.% of wheat flour with 2-10wt.% of yeast, 0-4wt.% of salt, 0-5wt.% of fat, 0.1-20wt.%, preferably 0.2-3wt.% of a bread modifier preferably containing an emulsifier, an antioxidant, an enzyme and fat, 0-5wt.%, preferably 0.1-2wt.% of sugar, 0.05-2wt.% of a monoglyceride composition having an iodine value of >20, preferably >40 and 45-65wt.% of water, each based on the wheat flour. Further, a roll of bread is prepared by baking a dough shaped in advance.
