Abstract:
PURPOSE: To obtain crushed fruits and vegetables useful as carrot paste, etc., preventing the oxidative discoloration caused by enzymes and the deterioration of natural flavor, by crushing fruits, vegetables, etc., in a closed apparatus under heating with a heating medium.
CONSTITUTION: Fruits, vegetables, etc., are crushed in a closed apparatus shielded from the outer atmosphere under heating with a heating medium such as steam or hot inert gas. The preferable heating temperature is, e.g. 75W95°C for apple and 85W100°C for sweet potato, carrot, cabbage, etc.
