Abstract:

PURPOSE: To obtain the crystalline glucide for foods, cosmetics, medicines, etc., having non-reducing property and low hygroscopic property, useful as a substrate for serum amylase determination, a chemical raw material, etc., by depositing crystals from a maltotetrasylglucoside-containing solution and collecting the crystals.
CONSTITUTION: This novel crystalline maltotetraosyl glucoside is obtained by reacting a maltopentaose-containing solution with a non-reducing glucide- containing enzyme to obtain an aqueous solution containing maltotetraosylglucoside or reacting an aqueous solution containing trehalose and starch or a non-reducing glucide-containing solution having torelalose structure at the ends with cyclomaltodextrin.glucanotransferase to obtain an aqueous solution containing maltotetrasylglucoside, subjecting the resultant aqueous solution to alkali treatment or chromatography to provide an aqueous solution having high multitetraosylglucoside content, concentrating the solution to deposit crystalline maltotetraosyl glucoside and collecting the resultant crystals.
