PURPOSE: To cultivate yeasts in a short period efficiently, by cultivating live molds of yeasts immobilized to a gel carrier in a nutritive medium, propagating the live molds of yeasts in the gel, recovering the live molds of yeasts which are liberated in the medium.
CONSTITUTION: Live molds of yeasts such as a yeast belonging to the genus Saccharomyces for preparting an alcohol, wine yeast, baker's yeast, etc. are immobilized to a gel carrier such as agar, carrageenan, furcellaran, alkali alginate, polyvinyl alcohol, cellulose succinate, casein succinate, etc. The immobilized live molds of yeasts are cultivated in a nutritive medium such as barley juice, grape juice, molasses, saccharified solution of starchy raw material, synthetic medium, etc. and the live molds of yeasts are propagated in the gel. The live molds of yeasts which are liberated in the medium are recovered, to give the live molds of yeasts efficiently.
